Lasagna Soup

Ingredients:

8 Servings

  • 1lb Ground Beef

  • 3 Garlic Clove (minced)

  • 1/2 Medium Yellow Onion (chopped)

  • 1/2tsp Onion Powder

  • 1/2tsp Garlic Powder

  • 1/4tsp Dried Basil

  • 1/4tsp Dried Oregano

  • 1/2tsp Salt

  • Ground Pepper (to taste)

  • 14 oz Crushed Tomatoes

  • 32oz Chicken Broth

  • 2tsp Tomato Paste

  • 6oz Lasagna Noodles (broken in half)

  • 1c Frozen Spinach

  • 1/4c Heavy Cream

  • 4oz Mozzarella Cheese (sliced)

Instructions:

Preparation:

  1. Mince 3 Garlic Cloves

  2. Chop 1/2 Medium Yellow Onion

  3. Gather Spices, 1/2tsp Onion Powder, 1/2tsp Garlic Powder, 1/4tsp Dried Basil, 1/4tsp Dried Oregano, 1/2tsp Salt, Ground Pepper

Cook:

  1. In a large soup pot, brown 1lb Ground Beef, drain excess grease

  2. Add 3 minced Garlic Cloves, 1/2 chopped Yellow Onion, and spices to the pot and saute until onions are soft.

  3. Stir in 14oz Crushed Tomatoes, 32oz Chicken Broth, 1c Water, 2tsp Tomato Paste, and 6oz Broken Lasagna Noodles

  4. Bring the mixture to boil, then reduce heat to low, cover, and simmer for 10 minutes.

  5. Stir in 1c Frozen Spinach and 1/4c Heavy Cream and simmer uncovered for 5 minutes

  6. Remove from heat and assemble bowls by adding one slice of mozzarella cheese in the bottom of each bowl and pouring the soup over.
