Chicken Fajita Bowl
Ingredients:

Chicken & Veggies
1lb Bonless Skinless Chicken Breast (sliced into strips)
1 Bell Pepper (sliced into strips)
1/2 large white onion (sliced)
2tbsp olive oil
1tsp garlic powder
1tsp onion powder
1tsp chili powder
1tsp ground cumin
1tsp smoked paprika
1tsp salt
1/2tsp black pepper
Cilantro Lime Rice
1c white rice
1/2 lime Juiced
1/4c fresh cilantro (chopped)
1/2tsp salt
Cilantro Lime Sauce
1/4c Greek Yogurt
1/2 lime Juiced
1/4c cilantro (chopped)
1 garlic clove (minced)
1/2tsp salt
1/4tsp black pepper
1tsp olive oil
Instructions:
Preparation:
Slice 1lb Boneless Skinless Chicken Breast, 1 Bell Pepper, and 1/2 White Onion
Gather Chicken Seasonings. 1tsp Garlic Powder, 1tsp Onion Poweder, 1tsp Chili Powder, 1tsp Ground Cumin, 1tsp Smoked Paprika, 1tsp Salt, 1/2tsp Black Pepper
Toss 1lb sliced Chicken Breast with half of the Seasonings and 1tbsp Olive Oil
Toss 1 sliced Bell Pepper and 1/2 Sliced White Onion with Seasonings and 1tbsp Olive Oil
Rinse 1c White Rice
Chop 1/2c Cilantro
Mince 1 Garlic Clove
Cook:
Cook 1lb Sliced & Seasoned Boneless Skinless Chicken Breast in pan over medium-high heat until browned and cooked through (to 165°F)
While chicken cooks, begin to cook 1c rinsed White Rice
Remove chicken from pan and add 1 sliced & seasoned Bell Pepper and 1/2 sliced & seasoned White Onion and cook until tender with a slight char. Combine with chicken and keep warm
Stir 1/2 Lime juiced, 1/4c chopped Cilantro, and 1/2tsp Salt into 1c cooked White Rice
In a bowl, combine 1/4c Greek Yogurt, 1/2 lime juiced, 1/4c chopped Cilantro, 1 minced Garlic Clove, 1tsp Salt, 1/4tsp Black Pepper, and 1tsp Olive Oil
Assemble the Bowls to your liking
