Beef Empanada
Ingredients:
2 Servings
1 Red Bell Pepper (diced)
1 Jalapeno (diced)
1 Yellow Onion (diced)
1/2c Cilantro (chopped)
4 Cloves Garlic (diced)
1tsp Paprika
1tsp Cumin
1tsp Chili Powder
1tsp Garlic Powder
1tsp Onion Powder
1tsp Salt
1tsp Pepper
1tsp Oregano
1lb Ground Beef
8oz Tomato Sauce
Empanada Dough 10ct
4oz Quesadilla Cheese
Oil for Frying
Instructions:
Preparation:
Dice 1 Red Bell Pepper, 1 Jalapeno, 1 Yellow Onion, 1/2c Cilantro, and 4 Garlic Cloves
Gather Seasonings. 1tsp Paprika, 1tsp Cumin, 1tsp Chili Powder, 1tsp Garlic Powder, 1tsp Onion Powder, 1tsp Salt, 1tsp Pepper, and 1tsp Oregano
Heat enough Frying Oil in a pot or fryer to 375°. Make sure there is enough oil to cover the Empanadas
Cook:
Saute 1 diced Red Pepper, 1 diced Jalapeno, 1 diced Yellow Onion, 1/2c Diced Cilantro, and 4 diced Garlic Cloves until soft
Add 1lb Ground Beef to vegetables and break up until browned and fragrant.
Add Seasonings and mix
Add 8oz Tomato Sauce and Simmer for 5 minutes
Set Aside and Cool
To a lightly floured surface, lay down one sheet of Empanada Dough and fill with 3-4 tbsp of Fillings. Grate on some Quesadilla Cheese
Close the Empanada Dough and crimp edges with a fork. Use a little water to close them if needed.
Fry in Frying Oil at 375° for a few minutes on each side until golden brown.
